Smashed Cucumber Salad

Cucumbers are a type of cold cuisine, formerly known as "Hu Gua". They were introduced to the Central Plains during the Western Han Dynasty, and the origin of cold dishes can be traced back to the Tang and Song dynasties. Its name comes from the rough technique of crushing cucumbers with a knife back during production, which is different from fine knife work and reflects a dietary philosophy that is close to life. This dish is popular in both the north and south of China and is also a common dish in overseas Chinese restaurants

Ingredients:

  • 2 cucumbers

  • 3-4 cloves garlic, minced

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar

  • ½ tbsp sesame oil

  • Chili oil to taste

  • A pinch of salt

  • A pinch of sugar

Steps:

  1. Wash the cucumbers and smash 'em with the back of your knife - don't crush 'em too hard, some chunks are nice

  2. Cut into pieces, toss with salt, let sit 3-5 mins, then drain the water

  3. Add the minced garlic to the cucumbers

  4. Pour in soy sauce, vinegar, sesame oil, and chili oil

  5. Sprinkle in a little sugar to balance the flavors

  6. Mix it all up and you're done!
